This chicken traybake was a last minute throw together of all the random ingredients in the fridge and tasted so great.. with plenty of leftovers for lunch the next day
Serves 2-4
2-4 chicken breasts
4 rashers smokey bacon
1 courgette
1 red onion
1 pepper
7-8 mushrooms
10 cherry tomatoes
10 pitted black olives
Half a tin chopped tomatoes
1 ball mozzarella
2 sprigs rosemary
2 garlic cloves
Dried mixed herbs
White wine
Olive oil
Salt and pepper
Heat oven to 180. Roughly chop the onion, pepper, and courgette. Put in a baking tray with a handful of mushrooms, a handful cherry tomatoes, 2 peeled and bashed garlic cloves and the rosemary.
Drizzle with oil and roast in the oven for 15 minutes.
Season 2-4 chicken breasts (depending on how many you want to serve) with salt and pepper and add to the pan, along with several glugs of white wine. Sprinkle over dried mixed herbs and roast for another 15 minutes.
Add the chopped tomatoes and drape over the bacon. Return to oven for 5 minutes. Tear in a ball of mozzarella and add a handful black olives, and return to the oven for 5 minutes.
Serve with green salad and crusty bread or new potatoes.
