This is a lovely healthy supper – great for casual eats with friends and family, the kind of food you can spread out over the table, build into kebabs and eat with your hands.
You can adjust the spice levels depending on your own taste – just add more or less chilli!
Makes 10-12 Kofte
Ingredients
For the kofte
500g beef or lamb mince
1 egg
1 small onion
1 red chilli
1 garlic clove
1 handful fresh coriander
1 tsp ground cumin
1 tsp smoked paprika
salt and pepper
For the salad
2 large carrots
2 large courgettes
1 red chilli
1 tsp ground cumin
1 lemon
1 tsp sugar
1/2 tsp salt
Handful chopped coriander
Olive oil
Method
Put the onion, garlic, chilli and coriander into a mini chopper and whizz until finely chopped – or chop by hand.
Put the mince into a bowl and season well with salt and pepper. Beat the egg and add to the bowl along with the chopped onion, chilli and coriander. Add the spices and mix it all together with your hands, before shaping into fat sausages.
Heat the grill, and place all the kofte on a piece of foil in the grill pan . Grill for 15-20 minutes, turning half way, until they are browned and cooked through.
While they are cooking, make the salad.
Grate the carrots and courgettes into a serving bowl. Finely chop the red chilli and coriander and add to the bowl. Squeeze over the juice of the lemon, and sprinkle over the sugar, salt and cumin. Drizzle over a little olive oil and toss together.
Serve the kofte with the salad, along with toasted pitta breads, chopped avocado and tomato, and greek yogurt.
