I love this meal for a weekend supper or relaxed get-together with friends. It’s ‘use your hands and get involved’ type of food, full of great flavours and spices but also super healthy. Get stuck in and enjoy.

Ingredients
For the burgers
300g minced Turkey breast
1/2 large onion
One garlic clove
2 tbsp tikka masala paste
1 tsp smoked paprika
For the Slaw
1 large carrot
1 large courgette
1 red chilli
1/2 lemon
1 tsp Cumin
1/2 tsp sugar
Chopped coriander
For the Raita
Handful baby tomatoes
1/2 cucumber
Dollop yogurt
1/2 lemon
1 tbsp mint sauce
salt and pepper
Pitta breads to serve
Method
Preheat the oven to 180
Finely chop or process the onion, and mix with the turkey mince in a bowl. Crush in the garlic clove, add the curry paste and smoked paprika, season well with salt and pepper and use your hands to mix it all together before shaping into four patties.
Put onto a greased baking tray and bake in the oven for 15-20 minutes until cooked through.
Meanwhile, make the salads. Grate the courgette and carrot into a dish. Deseed and finely chop the chilli before adding it to the bowl. Sprinkle over the cumin and sugar and add a couple of pinches of salt. Squeeze over half a lemon, then chop the bunch of coriander and chuck it in.
Chop the cucumber and tomato and put into a small dish along with a dollop of yogurt. Stir in the mint sauce, add a pinch of salt and squeeze over the remaining half a lemon.
Toast the pitta breads.
Remove the burgers from the oven and stuff them into the pittas along with the two salads and more yogurt on the side
