Whore’s Courgetti

This has become an absolute staple meal in my household recently.  I generally try to make a big batch of my Eat on Everything Tomato Sauce at the weekend, and use it on pasta, pizza and all sorts during the week – and this simple meal is my new favourite. It’s along the lines of a spaghetti alla puttanesca – which translates as “spaghetti in the style of a whore” – hence the title. I like to use courgetti for a low-carb, meal which is filling, nourishing, healthy – and unbelievably tasty. But feel free to use spaghetti instead – just cook  the spaghetti as you ordinarily would and then stir through the sauce. For a real time-saver you could use a good quality shop-bought tomato sauce – I like Mr Organic Healthier Choice which contains no added sugar or preservatives.

Ingredients

600g courgettes (or 150g dried spaghetti)

Salt

6-8 anchovies in oil

2 handfuls pitted green olives

1/2 teaspoon dried crushed chillis

2 portions Eat on Everything Tomato Sauce (or shop bought alternative)

50g feta cheese

20g parmesan cheese

Method

Spiralize the courgettes into a colander, sprinkle over a couple of pinches of salt and allow to sit for around 30 minutes to drain some of the juices out.

Heat a frying pan and add a little of the anchovy oil to the pan. Chop the 6 anchovies and add then to the pan to fry gently for a few minutes.

Add a good couple of ladles of the tomato sauce to the pan, throw in the olives and crushed chilli and bring to a gentle simmer.

Put another frying pan on the heat, squeeze as much liquid out of the courgetti as possible, then gently fry them off for a few minutes to warm and soften.

Drain any more liquid from the courgetti then dish into a bowl, stir through the sauce and top with feta and grated Parmesan.
