All the flavours of that American classic, the pecan pie rolled into these little energy bites. They contain just three ingredients, are refined sugar, gluten and dairy free, and take just moments to whip up. So sweet and sticky you’ll only need one or two to satisfy that after dinner sugar craving.
200g pitted dates
25g maple syrup
Preheat the oven to 180.
Put the pecans onto a baking tray and toast in the oven for 10 minutes.
Tip them into a food processor and whizz into fine pieces.
Add the dates, maple syrup, a good pinch of salt and a small splash of water and blend until well mixed and coming together in a ball.
Use a teaspoon to form into small balls, then transfer to a serving plate or store in the fridge for up to two weeks.
