The warmer weather means a massive increase in our family ice cream intake – which is fairly substantial at the best of times. This super simple summer treat for the kids is much healthier than your average choc ice but just as delicious, and great fun to make. Get the children to help decorate them with chocolate, fruit and nuts of their own choosing.

Ingredients
6 ripe bananas
150g chocolate of your choice, or assorted types.
Chopped nuts, frozen or freeze dried raspberries or dessicated coconut
12 lolly sticks
Method
Peel the bananas and chop them in half horizontally.
Insert a lolly stick into the end of each banana half, and gently push it in a little way.
Put them into a large tub and put it in the freezer for several hours until the bananas have frozen.
When they are ready, put your chocolate in a microwave safe bowl and melt on a low heat in short blasts in the microwave. (Use several bowls for the different chocolates.)
Remove the bananas from the freezer and spread them over a large board or piece of foil. Drizzle over the chocolate, or dip the bananas straight in and use a spoon to fully cover the tips.
Sprinkle over any nuts, raspberries or coconut you are using. As soon as the chocolate has cooled and hardened, return the bananas to the tub and put them back in the freezer.
Give them another hour to firm up before serving, or save for a day of summer sunshine.
