Strawberry Bircher Bowl

There is nothing that quite sings summer like the taste of a perfectly ripe British strawberry.

This bircher bowl takes just moments to prepare and is then waiting for you in the morning- cool, creamy and bursting with fruit flavours, the ideal breakfast for those glorious sunrise days.

Make it the night before so that the oats have plenty of time to soak and plump up.

Serves 1

Ingredients

30g rolled oats

30g muesli

1 scoop vanilla protein powder (optional)

100g ripe strawberries

100g greek or coconut yogurt

100ml milk of your choice

Toasted flaked almonds to serve

Method

Prepare the bircher the night before you intend to eat it. Put the oats and muesli and protein powder (if using) into a bowl. Slice half the strawberries and add them to the dish before stirring in the yogurt and milk.

The following morning remove the bowl from the fridge and top the bircher with the remaining strawberries and a good sprinkling of toasted flaked almonds.

    I’ve just found your latest delicious offering and am both proud and amused to tell you that this morning for breakfast I had my usual homemade oaty muesli soaked overnight in coconut yoghourt (because I happened to have some in the fridge), and topped with strawberries over from supper last night. No protein powder, but delicious all the same, and now you have written it down for me, I shall remember to do it again. Must get some more strawberries!

    Thanks so much for your email and I ‘m so glad you’ve all got this far in lockdown and survived. Things should be easier now that the boys can go back to school? Ridiculous that a couple of grandparents should be regarded as different from one where the bubbles are concerned. It does seem quite illogical, but so do a number of the messages that we get across the airwaves. I haven’t seen any of my family yet. The Welsh can’t travel further than 5 miles and the London lot are really too far away and too busy, although I have sent them one or two photos of coastal walks to tempt them. Roll on release!
