This is the simplest soup possible, it can be whizzed up in a jiffy for lunch, and has a gorgeous vibrant colour that shouts about all the goodness that’s in it.
It’s also low carb, low fat and low calorie!
Serves 1 (easily doubled, quadrupled etc.)
Ingredients
150g fresh or frozen cauliflower
150g fresh or frozen broccoli
1/2 a chicken or vegetable stock cube
1/4 tsp ground cumin
1/4 tsp turmeric
60g cottage cheese
Method
Put the vegetables, stock cube and spices into a pan and pour over 350ml boiling water
Simmer for 15 minutes.
Pour into a blender, add the cottage cheese and whizz to a smooth consistency. Serve immediately, or can be cooled and reheated.
